The venue, which takes its name from the protagonist of Torquato Tasso ‘s pastoral fable , is located in Genezzano , a bucolic town 45 kilometers from Rome (on the border with the province of Frosinone), and extends over a hill, covered with more than 2,500 walnut trees, which allows you to enjoy an extraordinary natural panorama . As if that were not enough, the Aminta resort is made up of two splendid late nineteenth-century farmhouses, surrounded by woods, fountains and gardens : nothing is left to chance and every detail is taken care of with the utmost attention.

The chef , in fact, is part of the third generation of restaurateurs and, since childhood, has been nourished by a love for quality raw materials . After working abroad for a long time – “hunting” for new techniques and culinary experiences –, Bottega returned to Italy in 2009, when he took over the family restaurant. A journey that culminated in 2016 with the first Michelin star , to which the “green star” was added last year , that of sustainability.

On the other hand, in a location like this, the cuisine cannot help but be inspired by respect for the environment and zero kilometers . Values that are inserted in a context aimed at innovation: “My menu – explains chef Bottega – is born from the synthesis of territory, passion and technique . These three elements are enhanced by the season, my mood and the product”. A journey through the most authentic flavors of nature, which begins with creamed cod , chickpea hummus and crunchy vegetables and ends with the dessert Bread, hay and chamomile. In between, the senses are inebriated by the Ravioli di caccia with bitter herb extract, the Fagottini stuffed with organic lamb and forest extracts or the Breast of pigeon on a spit, with mashed potatoes and truffle.
And if you have fallen in love with some product in particular, the Aminta farm is the right place for you. Inside, in fact, you will find vegetables, chestnut honey and everything that comes from the animals, raised directly on the fifty hectares that surround the structure. Equally rich is the cellar , a magical space – which can also be visited – where the great wines of the area reign supreme , accompanied by the most famous foreign labels.

The Aminta offer does not stop at the table. The structure, in fact, is also equipped with eight double rooms , which allow you to rest in a “rustic dwelling” equipped with all the most modern comforts, and a refined and charming suite . Relaxation is also guaranteed by the swimming pool , surrounded by greenery, by the spa room , equipped with hydromassage in a cave and water jets for the treatment of the cervical, and by the walnut grove , in which to “get lost” in the middle during romantic walks.
