In the preparation of this dessert, Regoli strictly uses whole milk and sheep’s ricotta, but it is the processing of the dough that makes the maritozzo unique; in fact, the dough is rolled out the day before, put in the refrigerator to rest and worked the following day, with a care and technique that only a historic brand can guarantee.
