Where to find the best carbonara in Milan

The queen of Roman cooking, her majesty carbonara, could rightfully be stitched straight onto the Italian tricolour for that extra splash of patriotism many claim our sunny peninsula lacks. And isn’t the scorching capital sun the first thing that comes to mind when a generous nest of fragrant spaghetti alla carbonara lands on the table? A velvety emulsion of egg yolks and pecorino romano coating the pasta, crisp bites of guanciale, the rich umami depth of rendered fat and a snowy dusting of cheese as thick as the first November flurries over the Alps, all brought together by the sharp kick of black pepper. If your eyes and stomach had already surrendered, by this point your nose has conceded defeat too.

Carbonara is that rare dish everyone agrees on; everyone loves it (and if by chance you do not, without sounding the alarm, we suggest keeping that secret strictly to yourself). The catch? The recipe, unlike the flavour, sharply divides opinions and sparks arguments hotter than a rolling pot of pasta water.

Spaghetti or mezzi paccheri? Pecorino or parmigiano? Pancetta or guanciale? In this contest, Flawless remains an impartial referee. In our guide to finding the best carbonara in Milan, you will only read about the most authentic Roman spots in town, leaving chefs the freedom to interpret the classic recipe (and rest assured, cream is nowhere to be found).

Osteria delle Commari

Via Vincenzo Civerchio, 9

Osteria delle Commari, Milan

CallDirections

Osteria delle Commari is where your Roman grandfather would take you if he had left the Eternal City in his youth to chase love in cold, handsome Milan. Dark wooden tables, unpretentious place settings and a wall of vintage bottles evoke a room where you can practically smell maritime pines and hear classic tunes sung in Italy’s most charming accent. Their carbonara? A luscious pan of tonnarelli smothered in a sauce the colour of spun gold, savoury strips of guanciale, cracked pepper and a snowdrift of pecorino. For us, nothing remains except adding Osteria delle Commari to speed dial.

Felice a Testaccio Milano

Via del Torchio, 4

Felice a Testaccio Milano

CallDirections

Since 1936, Felice a Testaccio has brought a ray of Lazio sunshine into the city of fog, serving time-honoured Roman recipes with a dash of northern polish. The setting suits a date night or a catch-up with friends when you fancy dressing up: clean lines, striking chequerboard flooring and neo-industrial ceilings remind you that you are in Milan, but once the waiter arrives with your plate of exquisite spaghetti alla carbonara, you might look out of the window and half-expect to catch sight of the Colosseum in the distance.

Rugantino

Via dei Fabbri, 1

Rugantino, Milan

CallDirections

Rugantino is an assault on Milanese patriotism, so be careful what you think while twirling a forkful of their carbonara: the golden Madonnina sees all, and she knows you are plotting a weekend escape to Rome to sample every classic dish in sight. If you are sitting on the terrace against the backdrop of the Colonne di San Lorenzo, the temptation to dive into Milan’s nightlife grows stronger with every glass of wine. Just take it easy with the carbonara, lest it work like a werewolf curse, where one mouthful has you speaking in Roman slang.

Al Mercante

Via Cesare Cantù, 7

Al Mercante, Milan

CallDirections

Al Mercante is an elegant dining room set in Milan’s historic centre, moments from the masterpieces of the Pinacoteca Ambrosiana. Chef Giuseppe Puccia’s daily menu centres on culinary technique and carefully sourced produce, balancing northern Italian staples with Mediterranean treasures. On occasion, the kitchen turns out an outstanding carbonara, enjoyed amid the quiet sophistication and calm that define this Milanese fine dining address.

Velavevodetto

Via Festa del Perdono, 1

Velavevodetto, Milan

CallDirections

Velavevodetto, on Via Festa del Perdono, feels thoroughly Milanese in its contemporary look, complete with neon lights and monochrome tiling that could easily pass for an osso buco and pan meino specialist. Yet one distinctive feature hints at the restaurant’s twin soul and points towards the hearty flavours of central Italy: a solid stone column standing in the middle of the dining room, stout and upright as a gladiator. The moment plates leave the pass, any doubt about what dialect this kitchen speaks instantly disappears. The carbonara is not to be missed: piping hot, rich and restorative, the perfect excuse to slip away from the Po Valley for an hour and savour the rolling hills of Lazio.

Nonna Maria Osteria Romana

Via Fratelli Bronzetti, 9

Nonna Maria Osteria Romana, Milan

CallDirections

Emerald-green walls, exposed brick, checked napkins and wooden chairs: stepping into Nonna Maria Osteria Romana, you immediately realise no name could suit it better. Owner Massimo wanted to bring a pocket of Trastevere to Milan to ease the homesickness familiar to anyone living away from home. His kitchen rests on two clear pillars: top-quality ingredients and fierce loyalty to tradition, a line Massimo and his brigade have sworn never to abandon. Here, the carbonara is the real thing, made with just five ingredients: eggs, salt, pecorino romano, black pepper and guanciale.

Davidino di un Sacco Bello

Via Lodovico Muratori, 50

Davidino di Un Sacco Bello, Milan

CallDirections

Davidino di Un Sacco Bello rounds off our selection with a homely dining room that captures the simple pleasure of an Italian family lunch and a shared love for culinary heritage. Green-and-white checked tablecloths, wicker chairs and walls hung with photographs, lamps and a wine collection to delight any grandfather set the scene. Crucially, the portions echo the generous plates a Roman grandmother serves, making sure no guest leaves hungry. Best of all, it is the kind of carbonara you will never tire of.
