Baobar: where mixology, modern cuisine and striking aesthetics meet

The premises that house Baobar have lived many lives, and each of them has left its mark. The large vintage chandeliers, reminiscent of when there was a flower shop here, coexist with the imprint left by the days when Baobar was a disco-bar, with the typical design of ‘Milano da bere’, an atmospheric second floor mezzanine and a delightful dehor. And then there are the references to its ethnic past: in fact, the name and logo recall the centuries-old African trees that, with their mighty roots, symbolising strength but also resilience, symbolically unite earth and sky, present and past, tradition and innovation.

Today, in fact, Baobar’s image is the result of growth perpetrated over time, regardless of the fashions of the moment, treasuring its past but always looking ahead. Something that the two owners, David and Antonio, continue to do. In fact, in the next few months they are planning a restyling that will take them away from industrial aesthetics and eco-green references: ‘we were ecological and sustainable before it became a fashion, today we don’t need to flaunt it’, they say.

What will remain, however, is what has become somewhat of an icon of the club: the large, colourful work by Ivano Facchetti portraying Jimi Hendrix and watching over the intimate ‘atelier’ room. The walls will continue to host works of art, transforming the venue into an ever-evolving gallery, with exhibitions and vernissages designed to surprise and inspire. But how will the new Baobar become? For now it is still top secret, but we do know that in terms of design it will focus on textured surfaces and on the large wine cellar, further emphasising its main vocation as a cocktail bar with contemporary cuisine. A format that focuses on attention to detail and the quality of raw materials, both in terms of mixology and the gastronomic offer.

The choice of drinks ranges from the great classics to those that are somewhat of a classic and still very popular Baobar signature drink, such as the invigorating Meeting, with gin, lime, ginger beer, violet cream, rosemary syrup and ginger, or the Negroni Zen, an explosive blend of gin, rhubarb pumpkin, vanilla, Campari, ginger beer and orange bitter. And then, for those who want to step out of their comfort zone a tiny bit, there’s a drink list that changes about every six months and brings together bold blends that encapsulate the essence of Baobar. The current one, which we advise you not to miss, plays with the concept of colours.

But now to food, which, from lunch, to aperitif, to dinner, to brunch, remains one of the main players. For the happy hour, the concept is that of sharing, but as the hours go by, it can easily turn into a real dinner, thanks to a varied and eclectic menu, with clear international contaminations and an eye to sustainability, which takes concrete form, for example, in the choice, when possible, of low-temperature cooking. The revisited Pad thai is very popular, but on the menu there are also Teriyaki salmon fillet, Spicy thai chicken and, for the more traditionalists, Rib with the bone and Aubergine parmigiana. But Baobar is also ideal for a successful business lunch or for those who want to treat themselves to a pampering even during their lunch break, with a menu that is smarter than the evening one, based on seasonal specialities.

Finally, Baobar’s Sunday brunch, one of the best and richest in town, truly caters to all tastes. It offers several menus that include, in addition to the usual choice of egg dishes, Club sandwiches, avocado toast, Piedmontese fassona burgers, and a vegan option. And then of course the traditional mouth-watering desserts, such as New York cheesecake and Brownies. Each menu is served with American coffee, orange juice and water, and the ( (delicious) bread from the TraMa micro bakery. And often the tastiest breakfast of the week is enlivened by live music in bossanova style, for a relaxed and super-cool American-style atmosphere.

Baobar has become an institution for the neighbourhood and a must for those who like to discover authentic places. A favourite haunt of the many artists, musicians and well-known names in show business who live in the area, it is the perfect place to relax without ostentation, enjoy a quality drink and let yourself be enveloped in a unique atmosphere.
