Among the very popular stores managed by Luca Guelfi Company is a new opening: GLACÉ Sweet Concept Store. The headquarters is in via Archimede, a few steps from the Mexican Canteen, the Vietnamese Saigon and the Japanese-style tapas bar Shimokita. In the case of GLACÉ however, the inspiration does not come from the kitchen of an exotic place: the taste is all inspired by her, Ilaria Forlani.
An exceptional pastry chef who cleverly combined her love for gelato and taste for beauty. The result is GLACÉ Sweet Concept Store: a boutique with a pop taste that presents the entire collection of GLACÉ design sweets and ice cream, as well as proposals ranging from breakfast to after dinner.
But let’s start from the location itself: inspired by Ilaria’s travels and tastes, it’s a call to a fantastic world. It looks like an oasis of cotton candy, with pastel-colored walls, ice cream-shaped balloons, music boxes and LEDs on the walls. A few raised tables give the room an intimate, welcoming atmosphere. Similar to a modern fairytale.
The same attention to detail is reflected in the menu, whose undisputed protagonist is ice cream. We can taste all year long the Crema GLACÉ, Nectar of the gods and Chocolate, prepared with cocoa made in Italy signed by Amedei Tuscany. Then every day Ilaria proposes new combinations of flavors, drawing inspiration from everything that surrounds it.
The rest of the menu is also inspired by her travels. From the passion for London, for example, come the ideas for the breakfast proposal: Matcha, Golden, Pink and Chai Latte, gluten-free pancakes and vegan Carrot Cake. Glacè lunch instead focuses on fast dishes like tartare, avocado toast, cous cous or quinoa salads.
What impressed us most of all, however, was the design desserts displayed at the counter, a collection of frozen desserts totally by GLACÉ. From the most varied tastes, the single-portion desserts that led this boutique to win the Best Frozen Dessert Company 2018 award. Here we can find the now famous frozen sushi, ice stones (“pebbles” with surprising fillings), garden cake (a cube cake that resembles a real garden) and ice pills (inspired by pills).
Among the other novelties we find the cheesecake, whose ingredients are served inside a half-opened can. All the ingredients used by GLACÉ, then, are of the highest quality: fresh milk from the Brescian family farms, fresh fruit, grape sugar and raw cane, no emulsifier or dye.
If, like us, you can’t resist the idea of having a breakfast or a snack in an enchanted, and definitely instagram-friendly place, you have to pass by GLACÉto taste (and photograph!) the wonderful “frozen” creations.
