The Tortona hills in Milan

A “window on the Tortona hills” opened in the Marghera area in September 2018, with the aim of transmitting the flavors and smells of a 100% Piedmontese cuisine. With “L’Anlot e Oltre …” Elena and Giovanni, together with Pino, wanted to reconstruct an authentic experience of the regional gastronomic scene, more precisely of the area around Tortona, surrounded by hills that extend as far as the eye can see.

Light woods and delicate colors are accompanied by handcrafted ceramic dinnerware. The representative focus of the restaurant is obviously the agnolotto; according to tradition, the latter is prepared by hand, pulling the pasta and using the stew of beef cooked over low heat with red wine as a filling.

But the innovative recipe for this historic dish is even more interesting on the menu, where agnolotto can be tasted according to your wishes. There are in fact four types of fillings selected from the kitchen and prepared fresh every day: classic, lean based on robiola and borage, light prepared with roasted white meats and the limited edition, which varies according to the first fruits of the season. To accompany the pasta, there are seven special condiments from the most delicate to the most intense, to conclude the “grandmother’s” beef broth.

Each plate of agnolotti can be served in a different size, to allow you to try more shades and choose your favorite. But not only is this specialty obviously made up of paper; to extend the culinary offer we find a series of dishes made in Piedmont, including a taste of cold cuts and cheeses from the hills and regional valleys, the fassona tartare, the vitello tonnato and the bella cauda, ​​a reinterpretation of the classic bagna cauda. There is also no shortage of seasonal dishes to give a twist to the menu, through a meticulous choice of products from the garden and the land that best characterize the variation of local climates and crops.
