In Milan, where good food is almost a religion, finding a place that balances tradition and innovation without feeling predictable is no easy feat. That is why Trattoria Burla Giò, just steps from the Duomo, immediately stands out as one of the city’s most intriguing spots. The restaurant opened in 1969 inside a small Milanese palazzo nicknamed ‘El Burla Giò’ – a local dialect phrase meaning ‘it’s falling down’ – because after the Second World War bombings it had barely remained standing, looking as if it were perpetually on the verge of collapse.

The atmosphere is rustic and informal, with modern touches that make you feel instantly at home yet somewhere special. Tables are well spaced, the setting is fresh and welcoming, and the mood is that of a restaurant determined to put you at ease.

The cooking is Milanese, but not exclusively: dishes combine tradition and creativity using fresh seasonal ingredients, such as Paccheri ai tre pomodori creamed with French butter, 24-month Grana, aubergine and ricotta, or the Agnello with potato foam and liquorice.

The Cotoletta alla milanese is an essential classic, served here with a parmesan potato gratin. Other standout staples include Mondeghili alla milanese – made with Gorgonzola, saffron and ossobuco jus –, Risotto alla milanese with saffron threads and veal jus, Riso al salto with pumpkin, luganega sausage and Taleggio, and, naturally, the signature Ossobuco del Burla Giò, served with mangetout, carrots and soy sauce. To finish, the traditional Milanese Meneghina with a San Marzano reduction, homemade Cannoncini filled with mascarpone cream and saffron from Pavia, and the Tartelletta di frolla with dark chocolate cream, saffron and chilli.

In short, Burla Giò takes its cooking seriously: dishes are prepared with an attention to detail that honours authentic Milanese heritage, and each ingredient is carefully selected to reflect the city, its culinary traditions and a genuine love for food. While the name may bring a smile, quality here is no joke.
