The sensory journey begins with the dishes of Chef Anthony Genovese who with great creativity brings to the table a cuisine that embraces different flavors and aromas. “My cuisine photographs my life, my experiences, my education, my vision of the future. Recently, Il Pagliaccio has changed its face, starting with the elimination of table linens. The tables return to their original shape to let the materials speak and be dressed only with plates. The mise en place has also been renewed, with refined and exclusive oriental cutlery and ceramics. The environment is warm, welcoming: wood, iron, soft lights, recall, even in strong contrast, harmony of colors, styles in continuous evolution, outlining a changing personality that looks outward with curiosity and foresight.

Il Pagliaccio offers four surprise tasting itineraries. The first is the “ Circus ”, a journey from East to West that knows no borders, but bonds of emotions and flavors centered on the dish. By choosing it you will experience the creative relevance of the chef, the result of his many international experiences. Ten courses served for all participants at the table. “ Orme ” instead is feeling, warmth, a journey that traces the way home, dotted with stops that recall memories. With this menu you can taste some of the Chef’s historic dishes. Eight courses served for all guests taking part in the dinner. Then there is “ Terrae ”, a menu entirely dedicated to the vegetal element. In this case there are six courses served. Finally there is also “ Intermezzo ”, four courses that can come from all the other menus, and which is normally served only at lunch.

The dishes and the order of the courses, for each of the four tasting menus, are decided on the spot, depending on the path the chef wishes to take his guests on, built on the basis of the needs and personalities of the diners. This is how each dish turns into a surprise, while waiting to discover the next dish, and so on until the end of the journey. To give you an idea of the taste sensations you will experience as soon as you cross the threshold of Il Pagliaccio, here are some dishes prepared over the years. Among the appetizers, we mention the “ Fatty liver and amberjack ”, the “ Green oyster and burrata ” and the “ Roasted squid and rhubarb ”. Among the first courses, the “ Mediterranean spaghetti and stockfish ”, the “ Zucchini and octopus cannelloni ” and the “ Fusilli, leek and almonds ”. Finally, among the second courses, the “ Potted duck and plums ”, the “ Red mullet, aubergines and fennel ”, the “ Pork, served with apple chutney ”.
