A world-famous address that has become a sacred temple of international gastronomy. La Pergola is the only three-Michelin-starred restaurant in the capital, and the reason for this can already be guessed from the location, the Rome Cavalieri Waldorf Astoria, a hotel of a thousand and one nights. Then there is him, Heinz Beck, a master who has been – and still is – a source of inspiration for thousands of chefs. Consulting his tasting menu is like visiting the greatest museums in Europe. Not only because of the style of the restaurant and the restaurant itself, but also because behind the cooker at the starred Bistrot64 is Kotaro Nada, a chef of Japanese origin. His cuisine pursues the ideal of beauty and, alongside the more classic dishes (cacio e pepe, carbonara and amatriciana), the chef also launches innovative ideas such as corncob croquettes or venison with cocoa. Not to be missed, then, is the spaghetti with potatoes, butter and anchovies, the highlight of Bistrot64.

‘At Pipero’s there is only the best, full stop’. This is the motto of Alessandro Pipero, maître, sommelier, host: in a nutshell, the ideal prototype of the modern starred restaurant owner. The cookers of the one-Michelin-starred restaurant, on the other hand, are entrusted to Ciro Scamardella, chef to whom we owe explosive creations such as octopus genovese in ravioli or pluma (a cut of pork, so called because it resembles a feather), pesto and radishes. His cuisine meets art, then, in the works of the great contemporary painters that Pipero periodically hosts. A true ‘taste gallery’.

A starred restaurant where – you can already guess from the name – the view of Rome, especially at sunset, is breathtaking. Equally spectacular, however, is the proposal of chef Fabio Ciervo who guides your senses on a journey through great classics and perfect harmony. This is the name of his two tasting courses that range from the revisited spaghetti cacio e pepe del Madagascar (perfumed with rose buds) to the well-balanced cremoso di fegato d’oca con uva (goose liver with grapes). And for lovers of the genre, it is impossible to miss the menu dedicated to white truffles: 50 grams of this prized mushroom will make you happy.

‘Come in, sit down and enjoy yourself’. And with an invitation like that, how can you say no to Zia, the starred address of Antonio Ziantoni and Ida Proietti. The young owners of the restaurant, in the heart of Trastevere, combine the best techniques of French cuisine with an enormous respect for local raw materials. A successful gamble that has also been rewarded by the Michelin Guide . On the other hand, with goodness like the buffalo, lemon and gentian risotto or the pigeon in civet, it was really difficult to go unnoticed.

All the gastronomic experience of chef Giulio Terrinoni condensed into a concept tailor-made for the guest. In a location that recalls the comfort of home, the restaurant’s philosophy emerges forcefully in the menu of the Per Me – Giulio Terrinoni restaurant: sustainability, territory and enhancement of the ‘wild catch’.
