Some days choosing what and where to eat feels impossible: pizza is great, but you had it two days ago, and you have been craving sushi for days, alongside a platter of cured meats and cheese or a thick Fiorentina steak. Grab a pen and note down this spot just 10 minutes from central Florence, because it might satisfy every craving in a single dish.

Cerbero RistoKlab, Florence

We are talking about Cerbero RistoKlab at Via del Ferrone 5, just five minutes from Scandicci. It is the brainchild of young restaurateur Cesare Pontigia, who created this innovative meat restaurant. Alongside classic Tuscan staples such as Bistecca alla Fiorentina and Filetto con il lardo, it blends traditional local ingredients with Japanese culinary techniques.

Cerbero RistoKlab is Florence’s first restaurant to introduce an extensive selection of meat sushi on its menu. It starts with a wide choice of uramaki which, if you are a Pokémon fan, you will certainly appreciate for their names: from simpler rolls like Alakazam, made with beef tartare and stracciatella and garnished with teriyaki sauce and kataifi pastry, to more unusual creations like Zubat, featuring fried sausage, truffle mayo and truffle pearls.

Beyond the rolls, the hosomaki are well worth ordering, such as the Charmander with sausage and ‘nduja mayo, finished with crispy onion and spicy sauce, alongside fusion dishes including the Pikachu, a taco made with fried nori seaweed, beef tartare, guacamole, mayo and sesame seeds.

For traditionalists, Cerbero RistoKlab also features classic Tuscan staples, including starters such as Ficattole with prosciutto crudo and burrata (pieces of fried dough, for the uninitiated), alongside a generous selection of grilled meats cooked to order right in front of your eyes.
