We are talking about Osteria delle Tre Panche. Its name is no coincidence: this wonderfully characterful spot was founded in tiny quarters with just three benches, seating at most 25 diners per service.

Founded in 1986 on Via Pacinotti in Florence, near the residential neighbourhood of Le Cure, this historic osteria makes it entirely natural to strike up a conversation with neighbouring diners and leave with new friends. That was the founding philosophy of owners Andrea and Vieri, who have now fulfilled their dream: bringing the “Tre Panche” to central Florence and, specifically, onto the Florentine rooftops with a second outpost. This more spacious venue sits on the panoramic terrace of the renowned Hotel Hermitage, just steps from Ponte Vecchio.

Beyond its warmth and conviviality, what truly cemented Osteria delle Tre Panche’s reputation is the food. The kitchen serves dishes mainly inspired by the Florentine area, crafted with ingredients from the finest local producers and prepared using innovative techniques that showcase each ingredient without masking its essence.

Truffle is the undisputed star of the menu at Tre Panche, served in both black and white varieties depending on seasonal availability. It elevates starters such as the Mozzarella in carrozza al tartufo bianco; pasta dishes like the Tortelli di pecorino di Fossa al tartufo or the iconic Tagliolini al tartufo bianco, the signature dish at Osteria delle Tre Panche; and meat mains including the Tagliata di manzo al tartufo bianco and the Tartare di filetto di manzo al tartufo bianco.
