Tripstillery Navigli
On Naviglio Pavese, experimental craft and artisan distilling come together in bespoke cocktails

On Naviglio Pavese there is a spot where the line between mixology and experimentation blurs, set in a space that feels more like a creative workshop than a simple bar, where every detail tells a story of ingredients, technique and passion.

Tripstillery Navigli merges the spirit of a cocktail bar with an urban distillery, featuring a working copper still on view at all times within a modern setup that also allows vacuum distillation. Guests are drawn into an immersive journey from the raw botanicals to the finished bottle, often customised on the spot.

The venue’s philosophy centres on in-house production: cocktails are crafted with Tripstillery’s own spirits, often distilled from ingredients grown directly on their estate on Lago d’Iseo. The result is a dynamic cocktail list where classics are reinterpreted with a personal touch. One example? L’Oleato, a bold mix of olives, olive oil and olive leaves, lifted by a maritime splash of seawater.

Another section of the menu plays with surprising presentations and unusual pairings, exploring novel takes on iconic drinks like the Manhattan or Tommy’s Margarita, tailored into delicate, punchy, spiced or seductive profiles to suit your palate.

The selection goes well beyond cocktails. The wine list is equally noteworthy, featuring natural bottles, craft ciders, French labels and finds from lesser-known regions. Alongside them come sharing boards of cured meats and cheeses sourced from small local producers, ideal for an evening snack.

The interior echoes the industrial aesthetic of the original Milan home of Tripstillery, in Porta Nuova, but with a more intimate, urban feel suited to the Naviglio Pavese canal. Large windows reveal the distillation underway, while outdoor tables promise relaxed drinks al fresco. Tripstillery Navigli is a place where having a drink turns into a genuine discovery, bringing together stories, modern technique and an appetite for new flavours.
