Trattoria del Pesce encompasses within its walls all the knowledge Federico Circiello – landlord, dining room manager and sommelier – has accumulated during his numerous experiences in Italy and abroad, working alongside important chefs. The kitchen strictly follows the rhythm of the seasons, paying the utmost attention to what is put on the table and to the aesthetics of the dishes: the latter are carefully prepared, rich in flavour and gastronomic intelligence. The catch is always fresh, from the local market; the menu includes blue fish, crustaceans and raw fish from the Argentario, which are well matched with the labels from the local wine cellar.

And indeed, the natural colours that characterise the restaurant are a pleasure to the eye, the strategic location away from the chaos of the city and the quality products are a given. Born from the collaboration with Michelin-starred Chef Felix Lo Basso, Livello 1 is the Eur restaurant with annexed fishmonger’s shop dedicated to haute cuisine and mixology. Here you can try the fish & cocktails combination or dine à la carte under the sign of experimentation among creative starters, first courses that combine sea and land (make a note of the spaghettoni ricci, guanciale and pecorino cheese) and second courses with a lot of fun.

In order to trace the history of this delicious seafood restaurant, one has to travel back in time a few years and cross national borders with one’s mind, arriving in the streets of Madrid. In the Sapgnola capital, while visiting a ‘Santeria’ – a place that combines sacredness and profanity, religion, evil eye and magic – the owners of the Roman sign had their intuition: to create a gastronomic Santeria in the city. Thus, in the shade of the pines of one of Rome’s trendiest neighbourhoods, an out-of-the-ordinary wine bar with kitchen and Oyster Bar was born: here, one dines on traditional Roman seafood dishes rich in oriental contaminations, toasting with 100% natural wines from small producers in Italy and Europe.

The restaurant stands on the foundations of the Pompeo Theatre and is a well-known address in the city: a must for lovers of ‘straightforward’ cuisine that hits the palate. Simple, short cooking times and excellent raw materials are its most obvious strengths. The menu changes with the seasons, without ever setting aside certain warhorses, such as the creative crudi, spelt spaghetti with anchovies from Ponza, bread crumbs and peppers cooked in ash and, depending on availability, spaghetti with urchins.

Located inside the boutique hotel The First Roma ARTE, Acquolina is a Michelin-starred gourmet restaurant that plays with cuisine and art, with a focus on seafood cuisine. Everything in the dishes is cared for down to the smallest detail to enhance the flavours of the Mediterranean and Italian cuisine: the combinations, although unusual, are delicate, so choose without fear of daring. The turbot with chard, oyster and kefir, together with the tortelli butter, anchovies and black truffle deserve a special mention. To get to Fello Mare you need only be near the Ponte Milvio. The restaurant is very youthful, encourages socialising and is perfect for a dinner in the company of friends, to share an evening of conversation and taste in total relaxation with a tasty spaghetto alle vongole (spaghetti with clams) made according to tradition and a glass of white wine. The raw material is fresh every day and leaves no doubt as to its quality. Fish is declined in all its forms and cooking: tartare, fried, raw, baked, roasted and salted. Particular attention is paid to the aesthetic aspect. A truly surprising taste experience.

It was the 1800s and the streets of Trastevere were crowded with Danish artists attending the Royal Academy of Fine Arts. They used to gather in a trattoria that soon became a symbol of the area and stole the heart of Ditlev Blunck, who portrayed it in one of his paintings. Risto Pescheria Consoli is a multi-purpose, informal establishment, immersed in theatmosphere of a picturesque seaside village. Crudités and catch of the day arrive directly at the table from the counter, expertly cooked and processed by the chefs to create tasty and interesting recipes. Among the many proposals, the eye inevitably falls on the prawn cacio e pepe, the smoked swordfish carbonara or the smoked tuna amatriciana, and one willingly yields (without remorse!) to the scampi supplì. A creative – and marine – twist on Roman tradition.
