Fabio Ciervo began working at La Terrazza dell’Hotel Eden in 2003 and, at the age of 32, earned his first Michelin star. His philosophy is based on a perfect harmony between innovation, well-being, ingredients, taste and art, to create a total harmony between an excellent gastronomic experience and a healthy lifestyle. Originally from Campania, Fabio, passionate about physical activity, grew up with the idea that using good raw materials in the kitchen is essential for the quality of life. When he entered hotel school he already knew what his path would be and after his studies he moved abroad, immediately finding work in some of the most prestigious kitchens. Firmly rooted in his Italian origins – and in particular Campania, from Sannio Beneventano -, and respectful of the ingredients that he scrupulously seeks, the Chef offers well-constructed dishes in his menus that, according to the season, make the most of the products, without any waste.
