Among the Chef’s signature dishes, we find Gamberi al sale , a dish in which purple prawns are flavoured with herbs from the scrubland and vaporised citrus essences, and then served on a specially made salt brick, and Tempura di Calamari , made with a siphoned batter and composed of an alcoholic part, capable of giving the dish a unique crunchiness and friability.
