RÉVA Vino & Resort was established  in 2013 as the recovery of Tenuta San Sebastiano, an ancient farmhouse in the Langhe, with the aim of creating a project of integral sustainability to enhance the area with awareness and harmony. The resort offers together the services of an exclusive structure and the reception of a family residence, all in the intimate context of a refined boutique hotel. The structure preserves the original style of a late 19th century farmhouse and its twelve large rooms. Some overlooking the Langhe and the Monviso chain, are furnished in minimalist style, according to an idea of ​​elegance founded on purity, integrity and authenticity.

Purity, integrity and authenticity – together with excellence and respect for the territory – are the values ​​that are also inspired by the oenologist Gianluca Colombo, assigned to the cellar, and the chef Paolo Meneguz, who leads the FRE restaurant. As for the winery, RÉVA manages organic vineyards in some of the most important Langa crus, namely Ravera in Novello, Lazzarito in Serralunga and Cannubi in Barolo. Out of the 7.5 hectares currently in production, 4 are planted with Nebbiolo, 5 with Barbera, 1 with Dolcetto and 1 with Sauvignon. The grapes are carefully selected then processed using innovative technologies and traditional techniques, with the sole purpose of preserving the peculiarities of the individual varieties. The exclusive use of indigenous yeasts and low-temperature fermentation are key factors in the production of elegant, fine and balanced wines, where intensity and persistence derive solely from the nature of the grape variety and not from the production process.

Manifesto of the FRE restaurant are the words of Paolo Meneguz, which well express the values ​​of purity, integrity and authenticity to which the RÉVA Vino & Resort project – directed by Daniele Scaglia – is totally oriented. “In the kitchen I like everything that is not tamed, which retains its own distinctive character,” he stated. This is how an author’s kitchen and territory come together, where the genuineness and frankness of the raw material meet the chef’s creativity and a savoir-faire based on respect for the territory and its history. The restaurant’s name is a reference to the Piedmontese dialect fré, which means blacksmith, with the intention of reconnecting to an original, artisanal and ancestral dimension. Identifying a kitchen with a marked personality and expressed today in the environment – once a workshop – furnished with elements in wood, wrought iron, leather and stoneware ceramics.

The FRE restaurant meets the indomitable spirit of a wild kitchen that ennobles itself in an impeccable technical execution and balanced tastes. Sophisticated with rustic flavors, hazelnut macaron with liver and currant paté is the amuse bouche to be enjoyed. Combination with SoloNoir, the classic brut method based on 100% Pinot Noir with 30 months aging on the lees. From the winter menu, the beat of venison with fermented Jerusalem artichokes, Jerusalem artichoke chips and lactic curd plays with the contrast between buttery, crunchy textures and between tones of creamy sweetness and pungent acidity. The Plin al Castelmagno with caramelized red onions is delicious. Presented in combination with the 2017 Barbera which matches in body and intensity. At the same time, classicism and technique are conveyed by a frank, vigorous and elegant dish.

RÉVA Vino & Resort is home to the largest spa in the Langhe, with a wellness area and two swimming pools, a heated underground, overlooking the vineyards, and an outdoor one, accessible only in summer, as well as the solarium area overlooking the vineyards and the Alps.
