Thanks to its restructuring and modernization, the Torre della Pagliazza, the oldest in the entire Florence, has returned to live new life. Among the first courses are the potato ravioli with thyme asparagus, pork lard and truffle and the incredible spaghetti with guinea fowl ragout with spring mushrooms. Among the latter, however, we find an excellent lamb glazed on burned potato, with cashews and mushrooms; braised pork leg and the ever-present crunchy octopus with roots, anchovies and rocket. At the end of the meal there are also desserts like millefeuille with ganache and mango, pistachio Bavarian or a selection of homemade ice creams.

Ask the maître for advice to best combine your dishes with one of the fabulous wines in the cellar and your meal will be absolutely perfect. And, if the weather is nice, sit outside, enjoying the view of the historic square. Whatever your desire, at the Osteria della Pagliazza, it will be granted.
