Nestled at number 45 of via Mameli, a few steps from the beating heart of Trastevere, Zia is the young restaurant of Antonio Ziantoni , Chef and entrepreneur of this gastronomic project, born after an intense training course that accompanied him between the stoves of famous starred restaurants of the Italian and international culinary scene. A sincere cuisine , but lover of experimentation that intertwines the techniques of the Hexagone with the products of our Peninsula, offering its customers an intriguing point of view between sea, land and garden, respecting the seasonality of the raw materials.

Zia’s location is exquisitely essential , dominated by a minimal and refined design that combines light and dark wood with natural color palettes that converge in shades of gray-green. Hanging lamps illuminate the tables, dialoguing synergistically with small backlit square niches; the table setting is simple and rigorous: no tablecloths, but large, perfectly folded napkins and a small floral centerpiece, the only bright chromatic touch that stands out in the room. A courageous choice that aims to put the cuisine and its flavors at the center of the Zia experience, wrapped in a muffled atmosphere, where time seems to have stopped.

Zia’s culinary proposal is a geographical investigation , a spatial journey between French techniques and the flavors of the Bel Paese , starting from the Lazio region, and then moving towards the coast. An encounter between sea, land and garden in respect of the seasonality and cyclicality of nature, with a focus on seasonal first fruits and very fresh raw materials. The menu alternates cooking methods, consistencies and new combinations, to be savored by choosing the à la carte menu or through two tasting itineraries, of five or seven courses. Last but not least, a selection of desserts that wink at the most classic pastry tradition, revisited in a contemporary key.
