For the first stop of the International Chef Cup – #ICC15 – Italy vs Switzerland, we will see the couple made of the chefs Iside de Cesare, of the La Parolina in Trevinano (VT) restaurant and Silvio Galizzi, of the restaurant Seven in Lugano, who will elaborate a vegetarian recipe symbolic of the encounter between Alps and Mediterranean.
Iside de Cesare is Roman, mother of two, cook and baker. After beginning studies in engineering, she leaves school for the world of cooking gaining experience among the gurus of Roman restoration. At the Frasca di Castrocaro Termo she begins as a pastry chef and meets Romano, just out of the kitchens of Gualtiero Marchesi and Erbusco, the Rigoletto at Reggilo and in Switzerland. Together they open La Parolina, a small country restaurant which has been awarded a very deserved Michelin star for a few years now.
Silvio Galizzi comes from a long line of chefs in Lugano, he has the gaze of someone who moves ahead without uncertainty. “The kitchen is like me, it’s make of sincere products influenced by perfumes of other lands”. His “other lands” are the Caribbean, New York, California, Malaysia, the Ligurean Riviera. These regions have been his school and have opened his horizons to other flavors. Awarded by the prestigious Michelin guides and Gault & Milliau, he is a member of the Grandes Tables de Suisse and of the Jeunes Restaurateurs d’Europe. He works on the sparkling shores of Lake Ceresio at the Seven in Lugano restaurant, where the excellent primary material marries with the concept of complete transparency towards the client in a chic and trendy environment.
