Just a stone’s throw from San Siro, this restaurant, relatively new to the Milanese scene, has already won over both public and critics (the very food writers it’s named after, present company included) thanks to its elegant, minimalist style but above all to its incredible offering of raw fish of the highest quality, among which numerous varieties of oysters stand out. But far be it from us to downplay the excellence of the charcoal-grilled dishes, another mainstay of the restaurant and the true “playing field” of chef Claudio Rovai. The latter, drawing on experience at the side of Mattias Perdomo, first at Contraste and then at Exit, has brought to this corner of San Siro a care and respect for quality ingredients, prepared with traditional techniques but reinterpreted in an innovative key and, as a true Tuscan, his innate passion for charcoal cooking. Among the highlights of the menu are the bluefin tuna marinated in gin, Patanegra lardo and brioche bread, as well as the oyster alla milanese, dutifully breaded, or the simple (but never banal) Benedetto Cavalieri spaghetti with charcoal-grilled clams and the quail leg and red prawn with plum umeboshi. The cellar also deserves a mention, celebrating the local territory and the savoir-faire of small artisanal producers, with an eye to their neighbours across the Alps.
